Christmas Jumbles

Delicate, buttery biscuits with a hint of lemon zest, shaped into festive spirals with a glacé cherry center. A charming holiday treat with nostalgic flair.

Ingredients

  • 240 g Plain flour
  • 120 g Butter
  • 30 g Vegetable oil
  • 180 g Caster sugar
  • 1 pcs Egg
  • 2 tsp Baking powder
  • 1 zest Lemon rind
  • a pinch Salt
  • as needed Glacé cherries, halved

Instructions

  1. Preheat oven to 180°C and line a baking tray with parchment paper.
  2. In a bowl, cream together the butter, sugar, and vegetable oil until smooth.
  3. Beat in the egg until well combined.
  4. Stir in the flour, baking powder, salt, and lemon rind to form a soft dough.
  5. Roll the dough out into thin ribbons on a lightly floured surface.
  6. Cut lengths and roll them into spirals, placing each spiral on the baking tray.
  7. Press a halved glacé cherry into the center of each spiral.
  8. Bake for 10–12 minutes, or until lightly golden.
  9. Cool on a wire rack before serving or storing.
