Christmas Jumbles
Delicate, buttery biscuits with a hint of lemon zest, shaped into festive spirals with a glacé cherry center. A charming holiday treat with nostalgic flair.

Ingredients
- 240 g Plain flour
- 120 g Butter
- 30 g Vegetable oil
- 180 g Caster sugar
- 1 pcs Egg
- 2 tsp Baking powder
- 1 zest Lemon rind
- a pinch Salt
- as needed Glacé cherries, halved
Instructions
- Preheat oven to 180°C and line a baking tray with parchment paper.
- In a bowl, cream together the butter, sugar, and vegetable oil until smooth.
- Beat in the egg until well combined.
- Stir in the flour, baking powder, salt, and lemon rind to form a soft dough.
- Roll the dough out into thin ribbons on a lightly floured surface.
- Cut lengths and roll them into spirals, placing each spiral on the baking tray.
- Press a halved glacé cherry into the center of each spiral.
- Bake for 10–12 minutes, or until lightly golden.
- Cool on a wire rack before serving or storing.
