Picnic Bar
A savoury vegetarian pastry bar with cheese, nuts, and a flavourful filling. Perfect for slicing and taking to a picnic.

Ingredients
- 150 g Grated cheddar
- 100 g Cashew nuts, finely diced
- 100 g Breadcrumbs
- 2 pcs Eggs
- 75 g Tomato purée
- 1 tsp Dijon mustard
- 350 g Puff pastry
- to taste Salt & pepper
Instructions
- Preheat the oven to 180°C (350°F).
- In a large bowl, mix together the grated cheddar, diced cashew nuts, breadcrumbs, eggs, tomato purée, Dijon mustard, salt, and pepper.
- Roll out the puff pastry on a floured surface.
- Spread the filling mixture evenly onto the pastry.
- Fold or roll the pastry to encase the filling, sealing the edges.
- Place on a baking tray lined with parchment paper.
- Bake for 35–40 minutes, or until golden brown and cooked through.
- Allow to cool slightly before slicing and serving.
