Picnic Bar

A savoury vegetarian pastry bar with cheese, nuts, and a flavourful filling. Perfect for slicing and taking to a picnic.

Ingredients

  • 150 g Grated cheddar
  • 100 g Cashew nuts, finely diced
  • 100 g Breadcrumbs
  • 2 pcs Eggs
  • 75 g Tomato purée
  • 1 tsp Dijon mustard
  • 350 g Puff pastry
  • to taste Salt & pepper

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, mix together the grated cheddar, diced cashew nuts, breadcrumbs, eggs, tomato purée, Dijon mustard, salt, and pepper.
  3. Roll out the puff pastry on a floured surface.
  4. Spread the filling mixture evenly onto the pastry.
  5. Fold or roll the pastry to encase the filling, sealing the edges.
  6. Place on a baking tray lined with parchment paper.
  7. Bake for 35–40 minutes, or until golden brown and cooked through.
  8. Allow to cool slightly before slicing and serving.
