Toasted Coconut & Lime Cake
A tropical and zesty cake featuring toasted coconut, lime zest and juice, and a tangy cream cheese icing. Perfect for summer gatherings or a refreshing treat.

Ingredients
- 170 g Butter
- 100 g Caster sugar
- 3 pcs Eggs
- 170 g Self-raising flour
- 50 g Desiccated coconut, toasted
- 1 lime Lime zest
- 2 tbsp Lime juice
- 100 g Cream cheese
- 225 g Icing sugar
- 50 g Butter (for icing)
- 0.5 tsp Vanilla extract
- 1 lime Lime zest (for icing)
- 1 tbsp Lime juice (for icing)
Instructions
- Preheat oven to 180°C. Grease and line a 20cm round cake tin.
- Beat the butter and sugar together until light and fluffy.
- Beat in the eggs one at a time, mixing well after each.
- Stir in the flour, toasted coconut, lime zest, and lime juice until just combined.
- Pour the mixture into the prepared tin and smooth the top.
- Bake for 20–25 minutes, or until the cake is well risen and a skewer inserted into the center comes out clean.
- Allow to cool completely before icing.
- To make the icing, beat together cream cheese, icing sugar, butter, vanilla extract, lime juice, and lime zest until smooth.
- Spread icing over the cooled cake and decorate with extra lime zest or toasted coconut if desired.
