Toasted Coconut & Lime Cake

A tropical and zesty cake featuring toasted coconut, lime zest and juice, and a tangy cream cheese icing. Perfect for summer gatherings or a refreshing treat.

Ingredients

  • 170 g Butter
  • 100 g Caster sugar
  • 3 pcs Eggs
  • 170 g Self-raising flour
  • 50 g Desiccated coconut, toasted
  • 1 lime Lime zest
  • 2 tbsp Lime juice
  • 100 g Cream cheese
  • 225 g Icing sugar
  • 50 g Butter (for icing)
  • 0.5 tsp Vanilla extract
  • 1 lime Lime zest (for icing)
  • 1 tbsp Lime juice (for icing)

Instructions

  1. Preheat oven to 180°C. Grease and line a 20cm round cake tin.
  2. Beat the butter and sugar together until light and fluffy.
  3. Beat in the eggs one at a time, mixing well after each.
  4. Stir in the flour, toasted coconut, lime zest, and lime juice until just combined.
  5. Pour the mixture into the prepared tin and smooth the top.
  6. Bake for 20–25 minutes, or until the cake is well risen and a skewer inserted into the center comes out clean.
  7. Allow to cool completely before icing.
  8. To make the icing, beat together cream cheese, icing sugar, butter, vanilla extract, lime juice, and lime zest until smooth.
  9. Spread icing over the cooled cake and decorate with extra lime zest or toasted coconut if desired.
