YumYum Cake

A classic fruit and nut loaf-style cake filled with sultanas, currants, cherries, and walnuts – a comforting bake perfect with tea.

Ingredients

  • 175 g Currants
  • 175 g Sultanas
  • 75 g Glacé cherries
  • 75 g Walnuts, chopped
  • 300 g Sugar
  • 200 g Self-raising flour
  • 2 pcs Eggs
  • 250 g Butter

Instructions

  1. Preheat oven to 140°C (fan) to 160°C (conventional).
  2. Cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time.
  4. Stir in the flour, then fold in the currants, sultanas, cherries, and walnuts.
  5. Pour the mixture into a lined loaf or cake tin.
  6. Bake for 60 to 90 minutes or until a skewer comes out clean.
  7. Allow to cool in the tin before turning out.
